The best beef brisket this side of Texas is served up through a window of a modified steel shipping container at the corner of an industrial dirt lot in Petersburg, Virginia… Who’d a thunk it?
The brainchild of former Carbon Leaf musician and metal artist, Tom McCormack – Saucy’s Walkup is housed in a 20’x8′ shipping container modified with a round porthole serving window, an overhanging metal roof, and doors that slide open as menu signage. The bright yellow exterior, stenciled signage and no-nonsense steel grate stoop are all about function and zero pretense. It has a billboard like presence along the road, and smoke can be seen rising over the lot early each morning as the daily brisket, ribs, and pulled pork are cooked up in the yard out back for the lunch crowd. And the crowds have been coming. Sauce master and cook, Erich Wolfgang is the man behind the meat, and he knows how to tempt the palette – first through smell and then – well, one bite and you’ll be back. This is real food for real people. Next time you’re driving along 95 south of Richmond, make this your lunch spot and don’t forget to ask for the slaw. It has a kick of cilantro that explodes against the taste of smoky brisket.
